Our Garden

In the kitchen, everything starts with one question: what is the best moment to harvest an ingredient?

For us, the answer doesn't come from a catalog or a supplier, but from the earth.
OltreSine is our garden, nestled among the hills of the Oltrepò Pavese. A place where we grow vegetables, aromatic herbs, and selected varieties following the natural rhythm of the seasons.
Here we don't chase aesthetic perfection, but flavor.
Every harvest is different from the last, just as every season tells something new.

Growing means knowing

Working the land directly changes the way we cook.
Watching a plant grow, understanding its timing, facing the heat, the rain, or the drought allows us to respect every ingredient even more.
We don't grow everything we use. We grow what we want to truly understand.
Tomatoes, zucchini, eggplants, peppers, squash, cabbages, salads, wild and aromatic herbs enter our menus only when they reach their best moment.

Beyond zero-KM

For us, the garden is not a marketing choice.
It's a space for research.
Many products still come from small producers who share our same philosophy.
The garden completes this journey, allowing us to experiment with varieties, early ripening, and agronomic techniques that directly influence the taste of our dishes.
Each season thus becomes a completely new page of the menu.
